Today I'm sharing..

Healthy and delicious food!


Yes, this is the typical fish "en papillote". The easiest, most delicious way to prepare fish, in my opinion. You only need (serves one):

- a fish (sea bass in this case), clean.
- one carrot
- 3 shallots
- 1 zucchini
- 1 lemon
- olive oil
- salt and pepper to taste

Directions:

1. Pre-heat the oven to 180º. Cut the vegetables "en julienne".

2. Line a heat resistant container with paper foil (I didn't have paper foil and had to use silver foil instead, but this will also do).Place halve of the vegetables forming a bed. Place the fish on the vegetable bed and season. Squeeze the lemon on the fish and cut one or two slices. Place them in the fish. Drizzle with olive oil.

3. Cover the fish with the remaining vegetables. Season and add some more olive oil.

4. Fold the oven foil creating an envelope for the fish and vegetables. Secure with string if necessary.

5. Put the fish in the oven for 20-25 min. (it actually depends on the oven and on the size of the fish. Check whether it is ready by opening the envelope and looking at its flesh. it should be white and tender. Mine took 30 min.)

New Year's Resolution

Sometimes I get the feeling I'm too worried trying to do the things I ought to do instead of having fun and enjoying.

So, resolution for the new year (which, yes, started over a month ago) : Enjoy, smile..and share.
